I don't know what might cause this, but as a workaround you could create an UltraMon display profile which applies the correct settings automatically when you log in.
To do this, right-click the UltraMon icon in the system tray, select Display Profiles > New Display Profile from the menu, configure the settings as desired, then check 'apply this display profile when logging in' on the last page of the wizard.
