How can I configure UltraMon to use two monitors for 1 screen at 2048 x 768 rather than 2 screens at 1024 x 768 ?, is this possible ?.

UltraMon can't do this, the driver for your video card would need to support this.
If you have a dualhead video card, look for an option called span or stretch mode.
