There are certain games that will always launch on your primary display (such as Fifa 07).
I am trying to figure out whether there is a command line interface to specify to Ultramon to switch between primary and secondary displays when launching a game. Or to enable a predefined set of certain applications to be launched on secondary display by default, since not all application can be controled by ultramon to moved from monitor to monitor, such as Fifa 07.

You could configure custom display settings for the game's shortcut, to do this right-click the shortcut, select Properties from the menu, then configure the settings on the UltraMon - Display tab as desired.
You can also change the primary monitor via UltraMon menu > Set Primary, or via command-line arguments to UltraMon.exe (see UltraMon Help > Scripting > Command-line arguments for details).
