Whenever I have Vista Windows Mail open, it shows up on both taskbars (two monitors). I have not noticed this behavior with any other program. Ideas?

Does this happen immediately after you have started Windows Mail?
I can't reproduce this issue, the task buttons for the main window and for message windows get shown on the correct taskbar only. I tested with UltraMon 2.7.1 on Vista RTM.
One thing you could try: right-click the UltraMon taskbar and select Refresh from the menu. Some users have reported drawing problems under Vista, which can cause the UltraMon taskbar to show tasks which are no longer on that monitor.
