Hello, I am trying to find how you can have a different excel file open on each monitor. If I move a file across to Monitor 2, all the excel files I have open also move with it. Thanks

The best way to do this is to launch a second instance of Excel: go to Start Menu > Run, type excel into the box and hit OK.
The second instance can then be moved to the other monitor.

This is not an UltraMon problem, it's how Excel handles multiple workbooks. Unlike Word which opens each document in its own window (although that's configurable), Excel opens them all in the same instance. This is why you can't drag one workbook to another monitor - it exists within the confines of the workbook window.
The easiest solution is as suggested earlier, to open another instance of Excel and open the workbook you want on the other monitor then move that instance of Excel to that monitor.
To easily switch between open workbooks, either use Control+Tab, or set Excel to list these workbooks in the taskbar. To do this go to the Tools / Options menu. Under the View tab, check the box 'windows in taskbar'. Now you can see a list of all open workbooks and select the one to be active.
