Is it possible to run 3 displays using UltraMon and an ATI Radeon HD3870 video card? I know the 3870 can run 2 displays but I don't know if using UltraMon and a DVI to 2x analog cable would allow 3.

UltraMon can't help with this, you would need the necessary hardware for the 3rd monitor.
A splitter cable will show the same image on both monitors, to extend your desktop to the 3rd monitor you would need to connect it to an additional video card, or get a quad (4-monitor) video card and connect all 3 monitors to that.
